The gear has 'blendshapes' to make it fit the avatars various shapes for that perfect fit. The bridle can have its jaw chain hidden and the blinkers can be splayed/narrowed or hidden as well. The plume stand can also be hidden, should one not want to wear the decorative feather.

Some mesh modification skill may be required by the end-user to modify the original avatar; most notably separating the arms and legs into their own meshes so they can be hidden/removed while the hooved sleeves are on. Or make separate body textures where the limbs are transparent. - There's other methods for sure, but I'll leave that to the Tech Priests!
